Most US recipes use Fahrenheit, while European and Australian recipes use Celsius. Gas marks are used primarily in British recipes. Common baking temperatures: 350°F = 177°C = Gas Mark 4 (moderate oven), 425°F = 218°C = Gas Mark 7 (hot oven).
Understanding the oven temperature converter
Oven temperature conversion looks like simple arithmetic, but real ovens complicate it. Fan or convection ovens cook faster than conventional ones at the same dial setting, gas marks are a coarse scale with roughly 25 degree Celsius steps, and most home ovens run 10 to 20 degrees away from the number on the dial.
Worked examples
Converting 350 F to Celsius for a fan oven
- 1Subtract 32: 350 - 32 = 318.
- 2Multiply by 5/9: 318 × 5 ÷ 9 = 176.7 C.
- 3Round to the nearest usable dial setting: 180 C conventional.
- 4Reduce by 20 C for a fan oven: 160 C fan.
350 F is 180 C conventional or 160 C fan, which is gas mark 4.
A recipe says gas mark 7 and your oven is electric in Fahrenheit
- 1Gas mark 7 corresponds to 220 C.
- 2Convert to Fahrenheit: 220 × 9 ÷ 5 = 396, then add 32.
- 3That is 428 F, so set the dial to 425 F.
Gas mark 7 is about 425 F, or 200 C in a fan oven.
Oven temperature equivalents
Fan values follow the standard 20 C reduction. Some manufacturers recommend 25 C, so check your manual if food browns too fast.
