    Why Recipe Scaling Is Not Always Linear

    Doubling a recipe seems simple: just double every ingredient. But seasoning, leavening agents, and cooking times do not always scale linearly. Salt and spices should be increased by about 1.5 times when doubling, not 2 times, and adjusted to taste.
